Galentine’s Day Cookies

If you’ve never heard of Galentine’s Day, that’s probably because it isn’t real. According to everyone’s favorite Councilwoman, Leslie Knope, from Parks and Recreation, February 13th is a day to show some love to all your best gals.

Just because this fictional holiday technically isn’t real doesn’t mean we can’t celebrate it, right?

Right.

I decided at the last minute that I wanted to do something for my girls this Galentine’s Day, but I didn’t know what to do on such short notice. Then I remembered…

Don’t worry, be Yoncé.

So this year I celebrated by channeling my inner Sasha Fierce, because Beyoncé is everyone’s favorite gal. I made sugar cookies that gave the traditional Necco Sweethearts a Bey-utiful upgrade. Even though she’s a married mama now, she’s still the ultimate single lady (so put your hands up!), and as the singer of countless girl power anthems, there’s no better girl to help me celebrate all the ladies in my life that I love most.

For the cookies, I made a slight variation on the basic sugar cookie recipe from Mrs. Field’s Best Ever Cookie Book, but you could use whatever your go-to recipe is for cutout cookies.

Warning: If you decide to make these cookies, you will have Beyoncé songs stuck in your head all day. Embrace it.

For the royal icing, I used 1 teaspoon of powdered egg whites, 1 tablespoon of water, lemon juice, and confectioner’s sugar. After beating the egg whites and water, I don’t really measure the other ingredients. I just add sugar and lemon juice until I’ve reached my desired consistency, but you can use this recipe as a guide. Thinner icing works better for flooding the cookies, while a thicker consistency helps for more precise lettering.
